I’m not a very good cook. I don’t enjoy cooking, and the more ingredients something has, the less likely I’ll even attempt it!
However, I do love Pinterest, and lately I’ve found some recipes with few ingredients that actually made me feel like I could attempt something other than my ‘this won’t kill my family members’ meal plan.
This recipe looked delicious. It was easy, only a few ingredients, and not too expensive to create.
The ingredients simply included:
1 (14 ounce) package turkey kielbasa, cut into 1/4 inch rounds
1 green bell pepper, diced
1/2 yellow, red or orange bell pepper, diced
1 onion, diced
3 small or 2 large potatoes, peeled and diced
salt and pepper
I used turkey sausage, and I didn’t measure the cuts. I just cut them into pieces we could chew. I did use two separate pans as the original author suggested, as well as adding minced garlic. I used two huge potatoes, and let them cook until they were more crunchy than soft. It turned out amazingly well. I was thrilled to have leftovers, but my husband snatched them up sooner than I did, added cheese and put them in a tortilla for his breakfast at work the next day! I’ll definitely make extra next time around, so I too, can enjoy breakfast. <grin>
